Southern Soul is the creation of chef Tom Goddard. He was Grill Chef at Smokestak where he learned American BBQ and smoking techniques, then Chef de Partie and Senior Grill Chef at Hawksmoor. He most recently worked at London's finest artisan bakery, The Dusty Knuckle
Tom teamed up with his uncle Martin Kay to begin trading as Hank BBQ at Kerb events (completing their Inkerbator program), and at many other events. From there they developed Southern Soul's strategy and plan for Canteen, where smoked meat expertise is combined with artisan bakery
